High altitudes are a critical component to the development of our exceptional coffee. Beans grown above 3,000 feet are classified as “high-altitude”, a mark of quality that coffee lovers recognize and trust. Our family farms in Chiapas, Mexico sit between 3,200 and 4,800 feet, proudly earning this distinction.
At these elevations, coffee cherries ripen slowly, producing harder, denser beans that roast evenly and preserve their flavor. This density gives Chiapas coffee its signature balance with rich chocolate sweetness with deep nutty undertones. Combined with the region’s mineral-rich volcanic soil, these highland conditions create the depth and character that define our cold brew.

Shade-grown coffee is another key factor of what makes our beans exceptional. Grown beneath natural canopies of banana trees and Mexican palms, our coffee thrives in a cooler, more balanced environment that mirrors the benefits of high elevation. The shade slows ripening, allowing each cherry to develop depth and density for a smoother, richer, and more refined brew.
This canopy does more than protect flavor. It safeguards the health of the coffee trees, filtering intense sunlight, conserving soil moisture, and enriching the land with organic matter from the surrounding plants. The result is a naturally balanced ecosystem where coffee and forest grow in harmony producing beans of remarkable quality and character.

From preparing the land and nurturing seedlings to handpicking each cherry, they guide every step with care and purpose. At the center of this work is COFINCAF, a cooperative that supports these farmers through practical training in sustainable agriculture.
